RESIDENT CHEF

Will Harris has been cooking professionally since the age of 15. After attending The Culinary Institute of America (CIA) in the Hudson Valley, he moved west to California. By age 23, he took the helm of a buzzy French café, where he developed a daily changing menu sourced entirely within a 60-mile radius.

Harris then brought his talents to Denver’s vibrant food scene, joining Edible Beats with a heavy focus on Linger in the Highlands, before launching Wildflower on Navajo Street.

His culinary adventures eventually took him back to the East Coast. There, he served as the chef for a prominent midtown Manhattan hotel group and an Upper West Side Mediterranean staple. Over his career, Harris has also driven major hospitality launches, opening multiple True Food Kitchen locations and a handful of boutique hotels stretching from Nantucket to Miami.

Currently, Harris serves as the Culinary Director of Whole Harvest Kitchen, a plant-based vegan restaurant in Kansas City, and runs the Denver Mussel Club, a shellfish-themed pop-up with a cult following.
